dc.description.abstract[EN]Trans fatty acids are found naturally in foods, particularly in those derived from ruminant animals, such as beef and dairy cattle. Over the past few decades, human consumption of trans fatty acids has increased, but this has been mainly from products containing partially hydrogenated vegetable oils. The correlation of trans fatty acid consumption with diseases such as coronary heart disease has been cause for concern, and led to recommendations to reduce their consumption. Trans fatty acids, however, have differing effects on human health. Therefore, in foods produced from ruminant animals, it is important to know their trans fatty acid composition, and how to enrich or deplete fatty acids that have positive or negative health effects. This review will cover the analysis of trans fatty acids in beef, their origin, how to manipulate their concentrations, and give a brief overview of their health effects.en
dc.description.abstract[FRE]Les acides gras trans existent à l’é tat naturel dans les aliments, particulièrement ceux issus des ruminants, tels les bovins de boucherie ou les bovins laitiers. Au cours des dernières décennies, on a assisté à une hausse de la consommation d’acides gras trans chez l’être humain, mais ceux-ci venaient essentiellement de produits renfermant des huiles végé tales partiellement hydrogéné es. La corrélation entre la consommation d’acides gras trans et certaines maladies comme l’insuffisance coronaire suscite des pre´occupations et a entraîné la formulation de recommandations visant à en réduire la consommation. Cependant, les effets des acides gras trans sur la santé varient. Par conséquent, il est important de connaître la composition des acides gras trans des aliments dérivés des ruminants, ainsi que la fac¸on d’accroître la concentration des acides gras bénéfiques et de diminuer celle des acides gras qui ne le sont pas. Cet article présente l’analyse des acides gras trans du boeuf, leur origine, les méthodes pour en modifier la concentration et un aperc¸u de l’incidence de ces acides sur la santé.fre
